Delicious Pork and Sausage on the El Charro Rotisserie
Welcome back to Smokin Joe’s Pit BBQ! I’m Joe, and today, we’re diving into an exciting cook using the El Charro Brazilian-style rotisserie. Get ready for some mouthwatering fire roasted pork and sausage!
Ingredients and Preparation
Pork Shoulder:

- Marinate: Place the cubes in a gallon-size ziplock bag. Use Smoke on Wheels Pork Marinade and Injection and let it marinate for about an hour.
Sausage and Vegetables:
- Sausage: Cut smoked jalapeño pork and beef sausage into halves.
- Vegetables: Prepare skewers with onions, homegrown jalapeños, serrano peppers, and Roma tomatoes.
Setting Up the Grill
- Charcoal: Use Kingsford Blue charcoal in the basket, supplemented with Fogo Super Premium Lump for steady heat.
- Preheat: Spread the charcoal evenly and let it ash over completely before placing skewers.
- Rotisserie Setup: Place the El Charro rotisserie on your Yoder Smokers Flattop Charcoal Grill. Adjust the speed controller to the lowest setting for even cooking.
Skewering and Seasoning
- Pork Skewers: Thread the marinated pork cubes onto the skewers, leaving some space between pieces for even cooking.
- Seasoning:
- Two skewers with Victory Lane Garlic Jalapeño Season All.
- Two skewers with Cattlemen’s Grill Tri-Tip Seasoning.
- Final skewer with smoked jalapeño sausage and vegetables.
Cooking Process
- Initial Cook: Start by placing the pork skewers on the bottom and sausage and vegetables on the top.
- Monitor and Rotate: Cook for about 15 minutes, then rotate skewers to ensure even cooking. Total cooking time should be around 40 minutes to an hour.
- Final Check: Use a thermometer to check pork temperature (aim for around 160-170°F). Adjust skewer positions as needed.
Serving
- Prepare Tacos: Once cooked, remove meat and vegetables from skewers. Slice and chop as desired.
- Assemble Tacos: Use warm tortillas, add pork, roasted vegetables, and a squeeze of fresh lime. Sprinkle with a pinch of salt for enhanced flavor.
Taste Test and Conclusion
